That might not sound so unusual, but the source of the laughter certainly was. Instead of the students playing traditional games and activities, they were entertained by the silly – but educational – antics of the actors in FOODPLAY, a national award-winning theater show that inspires and empowers children to make healthy choices.<span id="more-3002"></span></p>
<p>&nbsp;</p>
<p>As approximately 350 students filled the elementary school’s gym, FOODPLAY’s cast of performers helped make the message of good nutrition come alive through feats of juggling, music, magic and audience participation.</p>
<p>&nbsp;</p>
<p>During the performance, children follow Janey the Juggler, who dreams of becoming a juggling star but keeps dropping the balls because of her unhealthy diet. With the help of the “Coach” and the children in the audience, Janey learns how to juggle the foods she eats to wind up with a balanced diet.</p>
<p>&nbsp;</p>
<p>Through three separate performances, all 1,200 students at Old Kings Elementary had a chance to watch the show.</p>
<p>&nbsp;</p>
<p>“I thought it was a good reminder of what we should be doing and should be eating,” said Old Kings Elementary sixth-grader Darshawn Jones, 12.</p>
<p>&nbsp;</p>
<p>To bring this national program to Old Kings Elementary in Flagler Beach, Florida Hospital Flagler partnered with the Department of Food and Nutrition Services of Flagler County Schools.</p>
<p>&nbsp;</p>
<p>“We recognize that childhood obesity is a serious problem. If we don&#8217;t do something, one third of all children born in 2000 or later will suffer from diabetes at some point in their lives. These kids will be at a higher risk of developing chronic obesity-related health problems like heart disease, high blood pressure, cancer and asthma,” said David Ottati, Florida Hospital Flagler CEO. “That’s why we partnered with Old Kings Elementary to bring FOODPLAY to our community. It is our hope that interactive programs like this will help motivate kids, as well as their entire families, towards healthier eating habits.”</p>
<p>&nbsp;</p>
<p>The FOODPLAY program follows USDA Guidelines and has been updated with an interactive MyPlate scene, to help students and families identify nutritionally-dense foods and understand the importance of proper nutrition.</p>
<p>&nbsp;</p>
<p>“Because children are growing and developing, it is important to give them food that is nutritionally dense for proper overall growth and development,” said Dr. Vincent Verdeflor, Florida Hospital Flagler pediatrician and medical director of Flagler County Schools. “While children in general do have a higher metabolic rate than adults, their growing bodies need more than just calories and food, they need proper nutrition. If sugary and high-fat foods are replacing nutritious food, children may be unable to perform at age-appropriate levels. Additionally, allowing children to eat these types of foods could put them on the path of battling lifelong weight issues.”</p>

<p>FOODPLAY makes good eating great fun, but its messages are serious. In the last 25 years, childhood obesity rates have doubled among elementary school children and tripled among teenagers. One in three children is overweight, and less than two percent of the nation’s youth are meeting their daily nutritional requirements. Kids on average are drinking more than 600 cans of soda and consuming more than 150 pounds of sugars a year, missing out on recommended levels of fruits, vegetables and whole grains needed for optimal health.</p>

<p>According to USDA-sponsored evaluations, FoodPlay programs produce dramatic improvements in students’ eating and exercise habits and trigger community-wide interest in building healthy environments.</p>

<p>Healthy never tasted so good! (Paleo and Gluten Free)</p>
<p>Paleo Thin Mints<br />
• 1 cup blanched almond flour<br />
• 1 teaspoon coconut flour<br />
• 2 tablespoons cacao powder<br />
• ⅛ teaspoon celtic sea salt<br />
• ¼ teaspoon baking soda<br />
• 2 tablespoons vegan shortening<br />
• ¼ cup honey<br />
• 1 teaspoon peppermint extract<br />
• 6 ounces dark chocolate chunks<br />
• ½ teaspoon peppermint extract<br />
1. In a food processor , combine almond flour, coconut flour, cacao, baking soda, and salt<br />
2. Pulse in shortening, honey, and peppermint extract until dough forms<br />
3. Roll out dough between 2 pieces of parchment paper  to ⅛ inch thick<br />
4. Freeze dough for 15 minutes<br />
5. Using a 2-inch cookie cutter , cut out dough<br />
6. Transfer circles to a parchment lined baking sheet<br />
7. Bake at 350° for 4 minutes<br />
8. Cool completely on the baking sheets, then freeze for 1 hour<br />
9. Melt chocolate and peppermint extract in a small saucepan over very low heat<br />
10. Dip each cookie in chocolate, then place on a parchment-lined plate<br />
11. Transfer plate to freezer for 1 hour<br />
12. Serve<br />

• 1 1/2 cups frozen corn, defrosted (or fresh corn, parboiled, drained and cooled)<br />
• 1/2 cup chopped green onions or shallots<br />
• 2 fresh jalapeño peppers, seeded and minced, or 1 whole pickled jalapeño pepper, minced (not seeded)<br />
• 3 fresh plum tomatoes, seeded and chopped<br />
• 1 avocado, peeled, seeded, and cut into chunks<br />
• 1/2 cup fresh chopped cilantro<br />
• 1/4 cup fresh chopped basil<br />
• 2 Tbsp lime juice (about the amount of juice from one lime)<br />
• 1 Tbsp olive oil<br />
• 1/2 to 1 teaspoon of sugar (to taste)<br />
• Salt and pepper to taste<br />
METHOD<br />
1 In a large bowl, combine the beans, corn, onions, jalapeno chile peppers, tomatoes, avocado, cilantro, basil, lime juice and olive oil.<br />
2 Add sugar and salt and pepper to taste. (The sugar will help balance the acidity from the tomatoes and lime juice.) Chill before serving.<br />
Yield: Serves 6 to 8.</p>

<p>Each recipient received $500 at the annual Senior Scholarship Award Program at the Flagler Palm Coast High School auditorium on April 22.</p>

<p>The scholarships were presented by Florida Hospital Flagler Chief of Staff Elect, Anesthesiologist Dr. Glenn Zimmet.</p>

<p>Florida Hospital Flagler’s medical staff has provided scholarships to Flagler Palm Coast High School and Matanzas High School since 2004. Graduating seniors complete an application and the winners are chosen from various criteria, including class rank, SAT and ACT scores, extra-curricular activities, and an interest in pursuing medical field-related studies.</p>

<p>This year, a new recognition was added, the John M. Canakaris, MD award, which honors a high school student that has volunteered within the community to help the underprivileged and less fortunate.</p>

<p>Bourdeau has been a nurse for 20 years and <span id="more-2966"></span>began her career at Newark Beth Israel Medical Center in New Jersey, as a nurse in the Intensive Care Unit. After several years, she began working for Morristown Memorial Hospital in New Jersey in the Cardiovascular Intensive Care Unit where she cared for patients immediately following an open heart surgery. Here, she also served as a preceptor to new nurses and as chairperson of their Shared Governance committee.</p>
<p>In 2009, Bourdeau began working at Florida Hospital Flagler in the Intensive Care Unit and became House Supervisor.</p>
<p>Bourdeau is a Palm Coast resident and graduate from St. Luke’s School of Nursing in Bethlehem, Pa. Additionally, Bourdeau has earned her Critical Care Registered Nurse (CCRN) certification from the American Association of Critical Care Nurses.</p>

<p>The Florida Hospital Flagler pulled together a team of <span id="more-2962"></span>12 local physicians, 40 employees and 12 Daytona State College nursing students to volunteer their time and talents to provide free sports physicals for the local student athletes. This huge undertaking by the hospital enables the students to participate in sporting events for the coming school year.</p>

<p>Considering that the average cost for a student physical at a Walk-In Clinic is approximately $35 each, Florida Hospital Flagler provided $14,000 worth of free services to the Palm Coast community in one evening.</p>

<p>Dr. Hentzel grew up in Volusia County, returned to the area following his residency training, and has been in private practice in the area for the last 10 years. He specializes in <span id="more-2958"></span>the medical and surgical treatment of foot and ankle problems, focusing on diabetic care, sports medicine and wound care.</p>
<p>&nbsp;</p>
<p>Dr. Hentzel is board certified in Foot Surgery by the American Board of Podiatric Surgery. He earned a Bachelor of Science in Biology/Pre-Med from the College of Charleston in S.C. and a doctorate in Podiatric Medicine from Barry University School of Graduate Medical Sciences in Miami Shores, Fla. He completed a podiatric surgical residency at Palmetto General Hospital in Miami.</p>

<p>Additionally, Dr. Hentzel has traveled to Mexico to volunteer with Barry University’s Yucatan Crippled Children’s Project (YCCP). The YCCP was established in 1996 to provide surgical and medical treatment to crippled children in the Yucatan Peninsula of Mexico. Since its inception, physicians and surgeons from Barry University’s School of Podiatric Medicine have helped thousands of children who suffer from disabilities get back on their feet.</p>

<p>Newman has 17 years of experience in the engineering field, with eight years specifically in healthcare engineering. He served in the U.S. Navy as a Propulsion Engineer for six years and is a licensed Stationary Engineer (Power Plant Engineer).</p>

<p>The Flagler County resident most recently served as Engineering Supervisor for Florida Hospital Memorial Medical Center and Florida Hospital Oceanside. In this role, he oversaw the daily activities of the engineering department for both hospitals and all offsite properties.</p>

<p>The Johana Knox Award, named for one of West Volusia’s best-known volunteers, began in 2009 to recognize and celebrate the outstanding achievements of like-minded volunteers in the community.</p>
<p>&nbsp;</p>
<p>Benzo, like the other 11 nominees, was nominated for this year’s award by<span id="more-2945"></span> individuals in West Volusia who paid homage to the countless hours of unpaid work done by those who see a pressing need and then find a way to fix it.</p>
<p>&nbsp;</p>
<p>Benzo was nominated for her C.A.T.A.L.Y.S.T. program which stands for “Children and Adults Together Achieving Leadership. The program was created by Benzo just three years ago with only a handful of volunteers at one school. It has now grown to reach children at 10 area schools and comprises more than 200 volunteers.</p>
<p>&nbsp;</p>
<p>This year, in honor of the late Johana Knox’s love and commitment to children, the Florida Hospital Fish Memorial Foundation also presented its first-ever youth award to 11-year-old Deltona resident Olivia Rene Russo-Hood. Her passion to improve her community may have been ignited in 2009, after her family’s home was destroyed by a flood. Toward this end, Russo-Hood created Save the Earth Projects (S.T.E.P.) as a youth social entrepreneurship idea organizing social change, according to her nomination.</p>
<p>&nbsp;</p>
<p>Russo-Hood’s first project was a used-shoe collection and fundraising partnership with Volusia-Flagler Family YMCAs called “Leave a Good Footprint.” She organized a drive that collected more than 1,500 pairs of shoes to be distributed globally, and raised more than $700 for area scholarships to help needy children participate in YMCA activities.</p>
<p>&nbsp;</p>
<p>“People like Felicia Benzo, Olivia Rene Russo-Hood, and our other outstanding Johana Knox Award nominees have blazed a trail of goodness and leadership to help strengthen our community,” said Ed Noseworthy, President and CEO of Florida Hospital Fish Memorial. “It is our humble pleasure to bring recognition to those who do not seek it so that others may be inspired to follow in their footsteps.”</p>

<p>Benzo and Russo-Hood were just two of the 12 nominees for the 2013 Johana Knox Award for Community Service Excellence and were selected by a panel of judges who are not affiliated with Florida Hospital Fish Memorial.</p>

<p>The other nominees for this year’s award were: Shawn-Marie Batchelder of Deltona; Jewel Dickson of DeLand; Sharon Freeman of DeBary; Debbie Gormley of Daytona Beach; Barbara Helwig of Deltona; Trey Himes of Deltona; Michelle Jenkins of Deltona; Joan LaFleur of Orange City; Marsha Royle of DeBary; and Judy Semler of Deltona.</p>

<p>Previous recipients of the award include Sandra Wilson, executive director of the Gateway Center for the Arts; Ida Jane Wegrzyn, Florida Hospital Fish Memorial Auxiliary; and Brenda Gormley, Haven Hospice.</p>

<p>The Johana Knox Award for Community Service Excellence has raised more than $30,000 for cancer since the event first began in 2009. This year’s event was attended by 180 area residents and community leaders, raising approximately $12,000 to benefit cancer patients in the community.</p>
